Chicken Marbella
For a different spin with couscous, consider Molly Baz’s Chicken Marbella
Ingredients:
- 2 lbs chicken
- 1 clove garlic
- 1 ½ T oregano
- ¼ cup olive oil
- ¼ cup red wine vinegar
- ½ cup pitted prunes
- ½ cup green olives
- ¼ cup capers
- ½ bay leaf
- ½ cup brown sugar
- ½ cup white wine
- 1 T parsley
Directions:
- In large baking dish combine all ingredients. (If marinating overnight do not add brown sugar or wine until a few hours before baking.)
- Let marinate at least 2 hours.
- Bake in oven at 350 degrees for 50 min. Serve with rice.
