For a different spin with couscous, consider Molly Baz’s Chicken Marbella

Ingredients:

  • 2 lbs chicken
  • 1 clove garlic
  • 1 ½ T oregano
  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • ½ cup pitted prunes
  • ½ cup green olives
  • ¼ cup capers
  • ½ bay leaf
  • ½ cup brown sugar
  • ½ cup white wine
  • 1 T parsley

Directions:

  1. In large baking dish combine all ingredients. (If marinating overnight do not add brown sugar or wine until a few hours before baking.)
  2. Let marinate at least 2 hours.
  3. Bake in oven at 350 degrees for 50 min. Serve with rice.
