Ingredients:

  • 1 yellow onion, diced
  • 2 bell peppers, diced
  • 2 14.5 oz cans stewed diced tomatoes
  • 2 15 oz cans black beans
  • 1 16 oz can whole kernel corn
  • 1 lb ground beef or turkey
  • 1/2 T chili powder
  • 1 t cayenne pepper
  • 1/2 t cinnamon
  • salt and pepper
  • shredded cheese and/or sour cream

Directions:

  1. Cook meat. Drain fat.
  2. Add onion and peppers. Saute until they start to brown.
  3. Add all canned ingredients, including liquid from cans. Add spices.
  4. Bring to boil. Reduce heat and simmer for 30 minutes or until mixture reaches desired consistency.
  5. Ladle into bowls and top with cheese and/or sour cream.

11/12/2019 - added extra chili powder. Good amount of garlic powder, cumin, smoked paprika, oregano. Let simmer for extra time.
