Coconut Rice

Ingredients
- 3/4 cup rice
- 3/4 cup water
- 3/4 cup canned coconut milk
- 1/4 tsp salt
Instructions
- Combine all ingredients into a pot with a lid.
- Bring water to a boil.
- Reduce to a simmer, cover, and cook over low heat for 10 minutes.
- Remove from heat and let sit, covered, for 10 minutes. Don’t uncover until the very end!
