Ingredients

  • 1 tablespoon butter or ghee
  • 2 medium onions, chopped
  • 3 celery ribs, chopped
  • 2 Tbsp curry powder
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp cayenne pepper
  • ~25oz corn
  • 45 oz reduced-sodium chicken broth
  • ½ cup all-purpose flour
  • ½ cup whole milk or 1 can coconut milk
  • 1 rotisserie chicken, just the meat
  • 1/3 cup minced fresh cilantro

Instructions

  1. Melt butter. Add onions & celery, cooking until tender.
  2. Stir in seasonings, cooking for ~30s.
  3. Stir in 25-32oz corn and 45oz broth. Bring to a boil, reduce heat and cover. Simmer for about 15 minutes.
  4. Whisk ½ cup flour and ½ cup milk (or 1 can coconut milk) in a small bowl until combined. Stir into soup and bring the whole soup to a boil. Cook for about 2 minutes, or until the soup has thickened.
  5. Stir in meat of 1 rotisserie chicken. Serve, garnishing with a sprinkle of cilantro.
