Corn Chowder
Ingredients
- 1 tablespoon butter or ghee
- 2 medium onions, chopped
- 3 celery ribs, chopped
- 2 Tbsp curry powder
- 1 tsp salt
- ½ tsp pepper
- ½ tsp cayenne pepper
- ~25oz corn
- 45 oz reduced-sodium chicken broth
- ½ cup all-purpose flour
- ½ cup whole milk or 1 can coconut milk
- 1 rotisserie chicken, just the meat
- 1/3 cup minced fresh cilantro
Instructions
- Melt butter. Add onions & celery, cooking until tender.
- Stir in seasonings, cooking for ~30s.
- Stir in 25-32oz corn and 45oz broth. Bring to a boil, reduce heat and cover. Simmer for about 15 minutes.
- Whisk ½ cup flour and ½ cup milk (or 1 can coconut milk) in a small bowl until combined. Stir into soup and bring the whole soup to a boil. Cook for about 2 minutes, or until the soup has thickened.
- Stir in meat of 1 rotisserie chicken. Serve, garnishing with a sprinkle of cilantro.
